As you get older, you look at things differently.
I think what I do differently from a lot of TV chefs is that I break down barriers and make fine food more accessible to the regular person, who might be intimidated. I try hard, particularly with wine, to make it not intimidating. It’s sort of a teaching job.
A sign of growing old is when interviewers start asking you,What would you do differently if you had your life to live over again? I give some sort of answer because I dont wish to be rude, but I dont tell them the image that comes into my mind because they would think it vain and frivolous, and no one wants to be a subject for ridicule. I see myself as a tall, skinny Fellini, vigorously lifting weights. Thats what I would do differently. I would lift weights.
We are not like the social insects. They have only the one way of doing things and they will do it forever, coded for that way. We are coded differently, not just for binary choices, go or no-go. We can go four ways at once, depending on how the air feels: go, no-go, but also maybe, plus what the hell let’s give it a try.
